Ingredients
- 2 lb boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 3 oz cream cheese, softened
- ½ cup pesto
- 1½ cups shredded mozzarella cheese
Instructions
- Preheat broiler. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until lightly browned and done. Place chicken in a 13- x 9-inch baking dish.
- Stir together cream cheese and pesto. Spread mixture over chicken; sprinkle with mozzarella.
- Broil 2 to 3 minutes or until cheese is melted and lightly browned.

- 6 cups baby spinach
- ½ cup sliced almonds
- ½ cup dried cherries
- ⅓ cup olive oil vinaigrette

- Toss together all ingredients in a large bowl.
