Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 3 oz cream cheese, softened
  • ½ cup pesto
  • 1½ cups shredded mozzarella cheese

Instructions

  1. Preheat broiler. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until lightly browned and done. Place chicken in a 13- x 9-inch baking dish.
  2. Stir together cream cheese and pesto. Spread mixture over chicken; sprinkle with mozzarella.
  3. Broil 2 to 3 minutes or until cheese is melted and lightly browned.

  • 6 cups baby spinach
  • ½ cup sliced almonds
  • ½ cup dried cherries
  • ⅓ cup olive oil vinaigrette
