Ingredients

  • 3 slices center cut bacon
  • ¾ lb boneless, skinless chicken breasts, halved lengthwise
  • ½ cup spicy barbecue sauce
  • 6 Tbsp shredded reduced fat Cheddar Jack cheese
  • ½ tomato, chopped
  • 3 Tbsp chopped green onions

Instructions

  1. Cook bacon in a skillet over medium heat 6 to 8 minutes or until crisp. Drain, reserving 1 Tbsp drippings in skillet. Coarsely crumble bacon.
  2. Cook chicken in hot drippings over medium-high heat 3 to 4 minutes per side or until browned.
  3. Add barbecue sauce to skillet; cover and cook 2 to 3 minutes or until bubbly and chicken is done.
  4. Sprinkle chicken with cheese; cover and cook 1 to 2 minutes or until cheese melts. Top with bacon, tomato, and onions.

  • ½ (24-oz) pkg refrigerated mashed potatoes
  • 1 (12-oz) pkg frozen broccoli florets
  • ½ Tbsp butter
  • ¼ tsp pepper

Side Dish Instructions

  1. Heat potatoes according to package directions.
  2. Steam broccoli according to package directions; toss with butter and pepper.
