Mashed Potatoes and Steamed Broccoli

Ingredients
- 3 slices center cut bacon
- ¾ lb boneless, skinless chicken breasts, halved lengthwise
- ½ cup spicy barbecue sauce
- 6 Tbsp shredded reduced fat Cheddar Jack cheese
- ½ tomato, chopped
- 3 Tbsp chopped green onions
Instructions
- Cook bacon in a skillet over medium heat 6 to 8 minutes or until crisp. Drain, reserving 1 Tbsp drippings in skillet. Coarsely crumble bacon.
- Cook chicken in hot drippings over medium-high heat 3 to 4 minutes per side or until browned.
- Add barbecue sauce to skillet; cover and cook 2 to 3 minutes or until bubbly and chicken is done.
- Sprinkle chicken with cheese; cover and cook 1 to 2 minutes or until cheese melts. Top with bacon, tomato, and onions.

- 1 (12-oz) pkg frozen broccoli florets
- ½ Tbsp butter
- ¼ tsp pepper

- Heat potatoes according to package directions.
- Steam broccoli according to package directions; toss with butter and pepper.
