Creamy Chicken and Broccoli Skillet

Ingredients

  • 2 lb boneless, skinless chicken thighs, cubed
  • 1 Tbsp olive oil
  • 3 (8.8-oz) pouches microwavable roasted chicken flavored rice
  • 2 (12-oz) pkg broccoli florets
  • 2 (10.5-oz) cans cream of mushroom soup
  • ½ cup sour cream

Instructions

  1. Cook chicken in hot oil in a large skillet over medium-high heat until browned and done.
  2. Meanwhile, cook rice and broccoli according to package directions. Add soup and sour cream to skillet with chicken; cook 4 minutes or until thoroughly heated. Stir in hot broccoli. Serve over rice.
