Kung Pao Beef and Vegetables

Ingredients

  • 1½ lb flank steak
  • 1 (8-oz) pkg fajita blend, coarsely chopped
  • 1 (16-oz) pkg sliced mushrooms
  • 1 (8-oz) pkg snow peas
  • 1 cup kung pao sauce

Instructions

  1. Cook beef in a large skillet coated with cooking spray over medium-high heat 5 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
  2. Meanwhile, cook fajita blend, mushrooms, and snow peas in another large skillet coated with cooking spray over medium-high heat until browned and tender.
  3. Add beef and sauce to skillet with vegetables; cook 2 minutes or until thoroughly heated, toss.

Side Dish Ingredients

  • 3 (8.5-oz) pouches microwavable basmati rice
  • ½ cup chopped roasted, salted peanuts

Side Dish Instructions

  1. Heat rice according to package directions; stir in peanuts.
