Kung Pao Beef and Vegetables
Peanut Basmati RiceIngredients
- 1½ lb flank steak
- 1 (8-oz) pkg fajita blend, coarsely chopped
- 1 (16-oz) pkg sliced mushrooms
- 1 (8-oz) pkg snow peas
- 1 cup kung pao sauce
Instructions
- Cook beef in a large skillet coated with cooking spray over medium-high heat 5 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
- Meanwhile, cook fajita blend, mushrooms, and snow peas in another large skillet coated with cooking spray over medium-high heat until browned and tender.
- Add beef and sauce to skillet with vegetables; cook 2 minutes or until thoroughly heated, toss.

- ½ cup chopped roasted, salted peanuts
