Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp smoked paprika
  • 1 Tbsp chili powder
  • 6 slices bacon
  • 2 Tbsp olive oil
  • 3 Tbsp honey

Instructions

  1. Preheat oven to 375°F. Sprinkle chicken with salt, pepper, paprika, and chili powder. Wrap 1 slice bacon around each piece of chicken; secure with wooden picks.
  2. Brown chicken, in batches, in hot oil in a large ovenproof skillet over medium-high heat 2 to 3 minutes per side. Arrange all chicken pieces in skillet. Transfer skillet to oven.
  3. Bake 15 minutes or until chicken is done and bacon is crisp; drizzle with honey during last 5 minutes of baking.

  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 1 (8-oz) pkg frozen baby lima beans
  • 1 (8-oz) pkg frozen whole kernel corn
  • ½ cup less sodium chicken broth
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Sauté garlic and onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
  2. Stir in lima beans, corn, broth, salt, and pepper; reduce heat to medium. Cook, covered, 15 minutes or until limas are tender.
