Bacon-Wrapped Chicken

Ingredients
- 1½ lb boneless, skinless chicken breasts, halved lengthwise
- ½ tsp salt
- ½ tsp pepper
- 1 Tbsp smoked paprika
- 1 Tbsp chili powder
- 6 slices bacon
- 2 Tbsp olive oil
- 3 Tbsp honey
Instructions
- Preheat oven to 375°F. Sprinkle chicken with salt, pepper, paprika, and chili powder. Wrap 1 slice bacon around each piece of chicken; secure with wooden picks.
- Brown chicken, in batches, in hot oil in a large ovenproof skillet over medium-high heat 2 to 3 minutes per side. Arrange all chicken pieces in skillet. Transfer skillet to oven.
- Bake 15 minutes or until chicken is done and bacon is crisp; drizzle with honey during last 5 minutes of baking.
Side Dish Ingredients
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 Tbsp olive oil
- 1 (8-oz) pkg frozen baby lima beans
- 1 (8-oz) pkg frozen whole kernel corn
- ½ cup less sodium chicken broth
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Sauté garlic and onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
- Stir in lima beans, corn, broth, salt, and pepper; reduce heat to medium. Cook, covered, 15 minutes or until limas are tender.
