Ingredients

  • 1 (16-oz) pkg whole grain linguine
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (12-oz) pkg cauliflower florets
  • 1¾ cups less sodium vegetable broth
  • 1 cup freshly grated Parmesan cheese
  • ½ (8-oz) block cream cheese, softened
  • ½ cup milk
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (16-oz) pkg frozen Italian blend vegetables, thawed

Instructions

  1. Cook pasta according to package directions.
  2. Cook garlic in hot oil in a large saucepan over medium heat 1 minute. Add cauliflower and broth; cover and cook 5 minutes or until tender.
  3. Transfer mixture to a blender or food processor; add Parmesan, cream cheese, and milk. Process until smooth, adding additional milk if needed; stir in salt and pepper.
  4. Return mixture to saucepan; add vegetables, and cook 5 minutes or until thoroughly heated.
  5. Toss together pasta and sauce in a large bowl.
