Ingredients
- 1 (16-oz) pkg whole grain linguine
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (12-oz) pkg cauliflower florets
- 1¾ cups less sodium vegetable broth
- 1 cup freshly grated Parmesan cheese
- ½ (8-oz) block cream cheese, softened
- ½ cup milk
- ½ tsp salt
- ½ tsp pepper
- 1 (16-oz) pkg frozen Italian blend vegetables, thawed
Instructions
- Cook pasta according to package directions.
- Cook garlic in hot oil in a large saucepan over medium heat 1 minute. Add cauliflower and broth; cover and cook 5 minutes or until tender.
- Transfer mixture to a blender or food processor; add Parmesan, cream cheese, and milk. Process until smooth, adding additional milk if needed; stir in salt and pepper.
- Return mixture to saucepan; add vegetables, and cook 5 minutes or until thoroughly heated.
- Toss together pasta and sauce in a large bowl.
