Curried Split Pea Soup

Ingredients

  • 1 onion, chopped
  • ½ tsp crushed red pepper
  • ¼ cup olive oil
  • 7½ cups less sodium vegetable broth
  • 2 cups dried green split peas, rinsed well
  • 1 (13.5-oz) can unsweetened coconut milk
  • 1 tsp curry powder
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup freshly shaved Parmesan cheese

Instructions

  1. Sauté onion and red pepper in hot oil in a Dutch oven over medium-high heat 5 minutes or until onion is tender, stirring often. Add broth and peas.
  2. Bring to a boil. Reduce heat, cover, and simmer until peas are tender, about 25 to 30 minutes. Stir in coconut milk, curry powder, salt, and pepper.
  3. Blend mixture, in batches, in a blender to desired consistency. Sprinkle with cheese.
