Curried Split Pea Soup

Ingredients
- 1 onion, chopped
- ½ tsp crushed red pepper
- ¼ cup olive oil
- 7½ cups less sodium vegetable broth
- 2 cups dried green split peas, rinsed well
- 1 (13.5-oz) can unsweetened coconut milk
- 1 tsp curry powder
- ½ tsp salt
- ½ tsp pepper
- ½ cup freshly shaved Parmesan cheese
Instructions
- Sauté onion and red pepper in hot oil in a Dutch oven over medium-high heat 5 minutes or until onion is tender, stirring often. Add broth and peas.
- Bring to a boil. Reduce heat, cover, and simmer until peas are tender, about 25 to 30 minutes. Stir in coconut milk, curry powder, salt, and pepper.
- Blend mixture, in batches, in a blender to desired consistency. Sprinkle with cheese.
