Tuscan Stew
Feta-Butter Toasts
Ingredients
- ¾ lb ground pork sausage
- ½ (14-oz) pkg frozen bell pepper and onion stir fry medley
- 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
- 1 (14.5-oz) can less sodium beef broth
- ¼ cup shaved Parmesan cheese
Instructions
- Cook sausage and onion and pepper medley in a Dutch oven over medium heat until sausage is browned and crumbly.
- Add tomatoes and broth. Bring to a boil; reduce heat, and simmer 10 minutes. Season with salt and pepper, if desired. Sprinkle with cheese.
Side Dish Ingredients
- 6 (½-inch-thick) slices French bread
- 2 Tbsp butter, softened
- 2 Tbsp crumbled feta cheese
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Place bread in a single layer on a baking sheet.
- Stir together butter, cheese, and pepper; spread over bread slices. Bake 10 minutes or until bread is toasted and cheese is melted.
