Kentucky Beer Cheese and Bacon Dip

Ingredients

  • 10 slices bacon, chopped
  • 1 (8-oz) block cream cheese, softened
  • 1 (8-oz.) block extra sharp yellow Cheddar cheese, shredded
  • 1 (8-oz) block Havarti cheese, shredded
  • ½ cup IPA style beer
  • 2 Tbsp finely chopped fresh chives
  • 2 Tbsp whole grain mustard
  • 1 tsp garlic powder
  • ⅛ tsp cayenne pepper
  • 1 seedless cucumber, sliced
  • 4 stalks celery, cut into sticks
  • 1 (7.2-oz) bag pretzel thins

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Meanwhile, beat cream cheese and shredded cheeses in a large bowl with a mixer at medium speed until blended. Beat in beer, chives, mustard, garlic powder, and cayenne until blended. Stir in crispy bacon. Cover, and refrigerate at least 4 hours.
  3. Serve cheese mixture with cucumber slices, celery sticks, and pretzels.
