Ingredients

  • 1½ lb flank steak, trimmed 
  • ½ tsp salt 
  • ½ pepper 
  • 2 Tbsp olive oil
  • 1 (12-count) pkg slider buns, split and toasted 
  • ⅓ cup blue cheese yogurt dressing 
  • ½ (5-oz) pkg arugula  

Instructions

  1. Sprinkle steak with salt and pepper. Cook steak in hot oil in a cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or until desired doneness. Remove from skillet. Let stand 5 minutes before thinly slicing across the grain.
  2. Serve steak on slider buns with dressing and arugula.

  • 1½ lb small red potatoes, halved
  • ½ cup Italian dressing
  • ¼ cup sour cream
  • 1 Tbsp Italian seasoning
  • ½ tsp salt 
  • ½ tsp pepper
  • ½ (5-oz) pkg arugula 

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large saucepan; cook 15 minutes or until tender. Drain and rinse potatoes under water to cool.
  2. Stir together dressing, sour cream, Italian seasoning, salt, and pepper in a large bowl. Add potatoes and arugula; toss.
