Ingredients
- 1½ lb flank steak, trimmed
- ½ tsp salt
- ½ pepper
- 2 Tbsp olive oil
- 1 (12-count) pkg slider buns, split and toasted
- ⅓ cup blue cheese yogurt dressing
- ½ (5-oz) pkg arugula
Instructions
- Sprinkle steak with salt and pepper. Cook steak in hot oil in a cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or until desired doneness. Remove from skillet. Let stand 5 minutes before thinly slicing across the grain.
- Serve steak on slider buns with dressing and arugula.

- 1½ lb small red potatoes, halved
- ½ cup Italian dressing
- ¼ cup sour cream
- 1 Tbsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
- ½ (5-oz) pkg arugula
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a large saucepan; cook 15 minutes or until tender. Drain and rinse potatoes under water to cool.
- Stir together dressing, sour cream, Italian seasoning, salt, and pepper in a large bowl. Add potatoes and arugula; toss.
