Black-Eyed Pea and Greens Chicken
Brown Rice
Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 3 Tbsp olive oil, divided
- 6 slices center cut bacon, chopped
- 1 (15-oz) can black eyed peas, rinsed and drained
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tsp smoked paprika
- 1 (6-oz) pkg baby spinach
Instructions
- Preheat oven to 425°F. Sprinkle chicken with ¼ tsp each salt and pepper. Cook chicken, in batches, in 1 Tbsp hot oil in a large skillet over medium-high heat 2 minutes per side or until browned.
- Place chicken on a foil-lined baking sheet, and bake 10 minutes or until done.
- Meanwhile, cook bacon in a large skillet over medium-high heat 5 minutes or until crisp. Remove bacon, reserving drippings in skillet.
- Add peas, onion, garlic, and paprika to drippings. Cook 8 minutes or until onion is browned and tender. Stir in spinach, and cook 3 minutes or until wilted. Serve chicken with pea mixture, and sprinkle with bacon.

- Cook rice according to package directions.
