Jalapeño-Cheddar Meatballs

Cheddar Mashed Potatoes and Green Beans

Ingredients

  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1½ lb ground chicken
  • ¾ cup panko breadcrumbs
  • ½ cup chopped drained diced pickled jalapeños
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1 large egg, lightly beaten
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 425°F. Cook onion and garlic in hot oil in a large skillet over medium-high heat 6 minutes or until tender. Cool slightly.
  2. Combine chicken, onion mixture, breadcrumbs, jalapeños, cumin, chili powder, salt, pepper, and eggs in a large bowl. Gently mix together using your hands.
  3. Roll chicken mixture into 1½-inch meatballs. Place on a large rimmed baking sheet.
  4. Bake 12 to 15 minutes or until meatballs are no longer pink in center, shaking pan after 5 minutes.
  5. Sprinkle meatballs with cheese. Bake 2 to 3 minutes longer or until cheese melts.

  • 1 (12-oz) pkg frozen green beans
  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 1 cup shredded Cheddar cheese

  1. Cook green beans and potatoes according to package directions. Stir cheese into mashed potatoes until melted.
