Italian Sausage and Spinach Soup

Ingredients

  • ¾ lb ground Italian pork sausage
  • ½ Tbsp olive oil
  • ½ (32-oz) carton low sodium chicken broth
  • ½ cup water
  • ½ (14.5-oz) can fire roasted diced tomatoes
  • 3 Tbsp chopped onion
  • 2 cloves garlic, minced
  • ½ Tbsp dried oregano
  • ¼ tsp salt
  • ½ (5-oz) pkg baby spinach
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Cook sausage in hot oil in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Transfer sausage and drippings to a 3- or 4-quart slow cooker. Stir in broth, water, tomatoes, onion, garlic, oregano, and salt.
  2. Cover and cook on LOW 5 to 6 hours. Add spinach just before serving, stirring until wilted.
  3. Sprinkle each serving with cheese.
