Italian Sausage and Spinach Soup

Ingredients
- ¾ lb ground Italian pork sausage
- ½ Tbsp olive oil
- ½ (32-oz) carton low sodium chicken broth
- ½ cup water
- ½ (14.5-oz) can fire roasted diced tomatoes
- 3 Tbsp chopped onion
- 2 cloves garlic, minced
- ½ Tbsp dried oregano
- ¼ tsp salt
- ½ (5-oz) pkg baby spinach
- ¼ cup freshly grated Parmesan cheese
Instructions
- Cook sausage in hot oil in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Transfer sausage and drippings to a 3- or 4-quart slow cooker. Stir in broth, water, tomatoes, onion, garlic, oregano, and salt.
- Cover and cook on LOW 5 to 6 hours. Add spinach just before serving, stirring until wilted.
- Sprinkle each serving with cheese.
