Baked Everything Grouper

Olive-Caper Orzo and Spinach Salad

Ingredients

  • 2¼ lb grouper fillets
  • ½ tsp salt
  • ½ tsp pepper
  • ¾ cup panko breadcrumbs
  • 1 Tbsp everything bagel seasoning
  • 6 Tbsp mayonnaise

Instructions

  1. Preheat oven to 400°F. Place fish on a large greased baking sheet; sprinkle with salt and pepper.
  2. Stir together breadcrumbs and seasoning. Spread mayonnaise on fish; top with breadcrumb mixture, pressing gently to adhere.
  3. Bake 10 to 15 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1½ cups orzo
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • ½ cup sliced green olives
  • ¼ cup capers
  • ¼ cup chopped fresh dill or parsley
  • 6 cups spinach
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Cook orzo according to package directions.
  2. Meanwhile, cook garlic in hot oil in a large skillet over medium heat 1 to 2 minutes or until fragrant. Add olives and capers; cook 2 minutes or until thoroughly heated. Add orzo and dill, stirring to combine.
  3. Toss together spinach and vinaigrette in a bowl.
