Baked Everything Grouper
Olive-Caper Orzo and Spinach Salad
Ingredients
- 2¼ lb grouper fillets
- ½ tsp salt
- ½ tsp pepper
- ¾ cup panko breadcrumbs
- 1 Tbsp everything bagel seasoning
- 6 Tbsp mayonnaise
Instructions
- Preheat oven to 400°F. Place fish on a large greased baking sheet; sprinkle with salt and pepper.
- Stir together breadcrumbs and seasoning. Spread mayonnaise on fish; top with breadcrumb mixture, pressing gently to adhere.
- Bake 10 to 15 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 1½ cups orzo
- 3 cloves garlic, minced
- 2 Tbsp olive oil
- ½ cup sliced green olives
- ¼ cup capers
- ¼ cup chopped fresh dill or parsley
- 6 cups spinach
- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Cook orzo according to package directions.
- Meanwhile, cook garlic in hot oil in a large skillet over medium heat 1 to 2 minutes or until fragrant. Add olives and capers; cook 2 minutes or until thoroughly heated. Add orzo and dill, stirring to combine.
- Toss together spinach and vinaigrette in a bowl.
