Rosemary-Garlic Chicken Thighs
Roasted Radishes and Lemon-Mint Couscous
Ingredients
- ¾ lb boneless, skinless chicken thighs
- 2 tsp olive oil, divided
- 1 tsp chopped fresh rosemary
- ¼ tsp garlic powder
- ⅛ tsp salt
Instructions
- Rub chicken with 1 tsp oil; sprinkle with rosemary, garlic powder, and salt.
- Cook chicken in 1 tsp hot oil in a nonstick skillet over medium-high heat 5 to 6 minutes per side or until done.
Side Dish Ingredients
- ½ lb radishes, halved
- 2 tsp olive oil
- 1 Tbsp minced garlic, divided
- 2 tsp chopped fresh rosemary
- ⅛ tsp salt
- ⅛ tsp pepper
- ⅓ cup Israeli (pearl) couscous
- 3 Tbsp chopped fresh mint
- 2 Tbsp lemon vinaigrette
Side Dish Instructions
- Preheat oven to 400°F. Toss together radishes, oil, 2 tsp garlic, rosemary, salt, and pepper on a rimmed baking sheet; spread in a single layer. Roast 20 minutes or until golden brown.
- Meanwhile, cook couscous according to package directions. Stir in mint, vinaigrette, and 1 tsp garlic.
