Smoky Chipotle Pork Chops
Mixed Greens Salad
Ingredients
- 2 tsp ground chipotle chile pepper
- ½ tsp paprika
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp pepper
- 6 (6-oz) boneless pork chops
- 3 Tbsp avocado oil
Instructions
- Preheat oven to 400°F. Stir together chipotle pepper, paprika, oregano, salt, and pepper in a small bowl; rub over pork.
- Brown pork in hot oil in a large nonstick skillet over medium-high 2 minutes per side. Transfer to a greased baking dish.
- Bake 8 to 10 minutes or until done.

- ¼ cup lime juice
- ¼ cup extra virgin olive oil
- 1 Tbsp raw honey
- ½ tsp ground cumin
- ½ tsp kosher salt
- ½ tsp pepper
- 2 (5-oz) pkg spring mix
- 2 avocados, sliced
- 1 pint grape tomatoes, halved
Side Dish Instructions
- Whisk together lime juice, oil, honey, cumin, salt, and pepper in a small bowl.
- Combine greens, avocado, and tomatoes in a large bowl; drizzle dressing over salad. Toss.
