Smoky Chipotle Pork Chops

Ingredients

  • 2 tsp ground chipotle chile pepper
  • ½ tsp paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp pepper
  • 6 (6-oz) boneless pork chops
  • 3 Tbsp avocado oil

Instructions

  1. Preheat oven to 400°F. Stir together chipotle pepper, paprika, oregano, salt, and pepper in a small bowl; rub over pork.
  2. Brown pork in hot oil in a large nonstick skillet over medium-high 2 minutes per side. Transfer to a greased baking dish.
  3. Bake 8 to 10 minutes or until done.

  • ¼ cup lime juice
  • ¼ cup extra virgin olive oil
  • 1 Tbsp raw honey
  • ½ tsp ground cumin
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 2 (5-oz) pkg spring mix
  • 2 avocados, sliced
  • 1 pint grape tomatoes, halved

Side Dish Instructions

  1. Whisk together lime juice, oil, honey, cumin, salt, and pepper in a small bowl.
  2. Combine greens, avocado, and tomatoes in a large bowl; drizzle dressing over salad. Toss.
