Ground Beef Skillet Enchiladas

Ingredients
- 2 lb ground beef
- 2 (8-oz) pouches taco seasoning sauce with fire roasted tomatoes
- 1 (15-oz) can pinto beans, rinsed and drained
- ½ cup water
- 6 corn tortillas, cut into 1-inch strips
- 1½ cups shredded Mexican blend cheese
- 1 cup halved grape tomatoes
- ¼ cup fresh cilantro leaves
Instructions
- Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
- Add sauce, beans, and water; cook 5 to 6 minutes or until thoroughly heated. Stir in tortilla strips. Sprinkle with cheese; cover and cook 1 to 2 minutes or until cheese is melted.
- Sprinkle with tomatoes and cilantro.
