Easy Caesar Chicken

Ingredients
- 2 lb boneless, skinless chicken breasts
- 1 (5-oz) pkg Caesar croutons, crushed
- ½ cup grated Parmesan cheese
- ¾ cup Caesar dressing
Instructions
- Preheat oven to 425°F. Cut chicken in half crosswise; pound to ½-inch-thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Stir together crushed croutons and cheese in a shallow bowl.
- Brush chicken with dressing and dredge in crouton mixture to coat. Place on a lightly greased wire rack over a rimmed baking sheet. Bake 20 minutes or until browned and done.

- 2 Tbsp butter
- 2 cups long grain white rice
- 1 (32-oz) carton chicken broth
- 1½ tsp lemon zest
- 1 Tbsp lemon juice
- 1 (12-oz) pkg broccoli florets
Side Dish Instructions
- Melt butter in a large saucepan over medium heat; add rice, and sauté 1 minute. Stir in broth, lemon zest, and juice.
- Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
- Steam broccoli according to package directions; season with salt and pepper, if desired.
