Easy Caesar Chicken

Lemon Rice Pilaf and Steamed Broccoli

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (5-oz) pkg Caesar croutons, crushed
  • ½ cup grated Parmesan cheese
  • ¾ cup Caesar dressing

Instructions

  1. Preheat oven to 425°F. Cut chicken in half crosswise; pound to ½-inch-thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Stir together crushed croutons and cheese in a shallow bowl.
  3. Brush chicken with dressing and dredge in crouton mixture to coat. Place on a lightly greased wire rack over a rimmed baking sheet. Bake 20 minutes or until browned and done.

  • 2 Tbsp butter
  • 2 cups long grain white rice
  • 1 (32-oz) carton chicken broth
  • 1½ tsp lemon zest
  • 1 Tbsp lemon juice
  • 1 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Melt butter in a large saucepan over medium heat; add rice, and sauté 1 minute. Stir in broth, lemon zest, and juice.
  2. Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
  3. Steam broccoli according to package directions; season with salt and pepper, if desired.
