Ingredients

  • 1½ lb ground beef
  • 1½ lb Yukon Gold potatoes, cubed
  • 1 (16-oz) container refrigerated salsa
  • 1 (15-oz) can great Northern beans, rinsed and drained
  • 1 (15-oz) can Ranch style beans
  • 1 (10.5-oz) can cream of mushroom soup
  • 1 Tbsp chili powder
  • 1½ cups shredded Mexican blend cheese

Instructions

  1. Cook beef in a large skillet over medium heat until browned and crumbly; drain and transfer to a large bowl. Stir in all remaining ingredients except cheese. Cover, and refrigerate up to 3 days.
  2. Transfer mixture to a 5- to 7-quart slow cooker. Cover and cook on LOW 8 to 10 hours or until potatoes are tender. Season with salt and pepper, if desired. Sprinkle with cheese; cover until cheese melts.
