Ham and Cheese Chicken
Steamed Rice and Browned Butter BroccoliIngredients
- 2 lb boneless, skinless chicken breasts
- ½ tsp pepper
- 2 Tbsp olive oil
- 6 (1-oz) slices deli ham
- 6 slices provolone cheese
- 1 (10.5-oz) can cream of chicken soup
- ¼ cup less sodium chicken broth
- ½ tsp paprika
Instructions
- Cut chicken in half lengthwise, and pound to ½-inch-thickness between plastic wrap using a meat mallet; sprinkle with pepper.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 minutes per side or until done. Top each piece of chicken with ham and cheese; cover and let stand until cheese melts.
- Meanwhile, stir together soup, broth, and paprika in a small saucepan; cook over medium-low heat until thoroughly heated. Spoon sauce over chicken.

- 1½ cups long grain white rice
- 2 (12-oz) pkg broccoli florets
- 3 Tbsp butter, melted
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Cook rice according to package directions.
- Toss together broccoli and melted butter on a rimmed baking sheet.
- Bake 15 minutes or until broccoli is tender and butter is browned. Sprinkle with salt and pepper.
