Ham and Cheese Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 6 (1-oz) slices deli ham
  • 6 slices provolone cheese
  • 1 (10.5-oz) can cream of chicken soup
  • ¼ cup less sodium chicken broth
  • ½ tsp paprika

Instructions

  1. Cut chicken in half lengthwise, and pound to ½-inch-thickness between plastic wrap using a meat mallet; sprinkle with pepper.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 minutes per side or until done. Top each piece of chicken with ham and cheese; cover and let stand until cheese melts.
  3. Meanwhile, stir together soup, broth, and paprika in a small saucepan; cook over medium-low heat until thoroughly heated. Spoon sauce over chicken.

  • 1½ cups long grain white rice
  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp butter, melted
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Cook rice according to package directions.
  2. Toss together broccoli and melted butter on a rimmed baking sheet.
  3. Bake 15 minutes or until broccoli is tender and butter is browned. Sprinkle with salt and pepper.
