Steak, Rice, and Cheese Burritos

Tortilla Chips with Salsa

Ingredients

  • ½ cup long grain white rice
  • 1 tsp lime zest
  • ½ lb top sirloin steak
  • 1 Tbsp taco seasoning mix
  • 1 Tbsp olive oil
  • 2 burrito size flour tortillas
  • ¾ cup shredded Colby Jack cheese
  • ½ (8-oz) container guacamole 

Instructions

  1. Cook rice according to package directions; stir in lime zest.
  2. Meanwhile, sprinkle steak with seasoning mix. Cook steak in hot oil in a nonstick skillet over medium-high heat 5 minutes per side or to desired doneness. Let stand 10 minutes; cut into bite-sized pieces.
  3. Spoon about ½ cup rice down center of tortillas. Top with desired amount of steak and cheese. Fold bottom of tortilla over filling; fold in sides, and roll up.
  4. Serve burritos with guacamole for dipping.

  • ½ (8.25-oz) bag tortilla chips
  • ½ (16-oz) container refrigerated salsa
