Lemon-Baked Tilapia
Prosciutto Green Beans Bundles and OrzoWine Recommendation

Ingredients
- 1 lemon, halved and divided
- 1 Tbsp olive oil
- 2 (4-oz) tilapia fillets
- 1 Tbsp finely chopped fresh parsley
- ⅛ tsp kosher salt
- ⅛ tsp freshly ground pepper
Instructions
- Preheat oven to 425°F. Grate zest and squeeze juice from one lemon half. Thinly slice remaining lemon half.
- Whisk together oil, lemon zest, and juice in a small bowl.
- Arrange fish in a lightly greased 8-inch baking dish. Sprinkle with parsley, salt, and pepper. Drizzle lemon oil over fish; top with lemon slices.
- Bake 10 to 12 minutes or until fish flakes with a fork. Sprinkle with additional parsley, if desired.
Side Dish Ingredients
- 2 oz sliced prosciutto
- ½ (12-oz) pkg green beans
- 1 Tbsp olive oil, divided
- ¼ tsp freshly ground pepper, divided
- ½ cup orzo
- 3 Tbsp freshly grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 425°F. Arrange prosciutto in stacks of 2 slices each. Divide green beans between prosciutto stacks; wrap into bundles, securing with wooden picks, if necessary.
- Arrange green bean bundles on a parchment paper-lined rimmed baking sheet; drizzle with ½ Tbsp oil, and sprinkle with pepper. Bake 12 to 15 minutes or until crisp and lightly browned.
- Meanwhile, cook orzo according to package directions; toss with ½ Tbsp oil, cheese, and pepper to taste.
