Ingredients

  • 1 lemon, halved and divided
  • 1 Tbsp olive oil
  • 2 (4-oz) tilapia fillets
  • 1 Tbsp finely chopped fresh parsley
  • ⅛ tsp kosher salt
  • ⅛ tsp freshly ground pepper

Instructions

  1. Preheat oven to 425°F. Grate zest and squeeze juice from one lemon half. Thinly slice remaining lemon half.
  2. Whisk together oil, lemon zest, and juice in a small bowl.
  3. Arrange fish in a lightly greased 8-inch baking dish. Sprinkle with parsley, salt, and pepper. Drizzle lemon oil over fish; top with lemon slices.
  4. Bake 10 to 12 minutes or until fish flakes with a fork. Sprinkle with additional parsley, if desired.

  • 2 oz sliced prosciutto 
  • ½ (12-oz) pkg green beans
  • 1 Tbsp olive oil, divided
  • ¼ tsp freshly ground pepper, divided
  • ½ cup orzo
  • 3 Tbsp freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 425°F. Arrange prosciutto in stacks of 2 slices each. Divide green beans between prosciutto stacks; wrap into bundles, securing with wooden picks, if necessary.
  2. Arrange green bean bundles on a parchment paper-lined rimmed baking sheet; drizzle with ½ Tbsp oil, and sprinkle with pepper. Bake 12 to 15 minutes or until crisp and lightly browned.
  3. Meanwhile, cook orzo according to package directions; toss with ½ Tbsp oil, cheese, and pepper to taste.
