Pork Tenderloin Fried Rice

Ingredients

  • 3 (8.8-oz) pouches microwavable jasmine rice
  • 3 large eggs, lightly beaten
  • 4 tsp toasted sesame oil, divided
  • 2 (1-lb) pork tenderloins, trimmed
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp ground ginger
  • 4 green onions, chopped and divided
  • ¼ tsp crushed red pepper
  • 1 (20-oz) pkg frozen stir fry vegetables
  • ⅓ cup less sodium soy sauce

Instructions

  1. Microwave rice according to package directions.
  2. Cook eggs in 1 tsp hot oil in a large wok or skillet over medium-high heat, stirring occasionally, until set. Remove from skillet. Slice egg.
  3. Cut pork into bite-size pieces; sprinkle with garlic powder, onion powder, and ground ginger. Cook pork, 2 onions, and crushed red pepper in 1 tsp hot oil in same skillet over medium-high heat 8 minutes until done. Remove from skillet.
  4. Cook rice in 2 tsp hot oil in same skillet over medium-high heat until lightly browned.
  5. Meanwhile, steam vegetables according to package directions. Add vegetables, pork, egg, and soy sauce to rice; cook, stirring, until thoroughly heated. Sprinkle with 2 onions.
