Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 3 Tbsp olive oil
  • 1 lemon
  • ½ cup whole milk plain Greek yogurt
  • ½ cup crumbled feta cheese
  • 3 Tbsp olive oil mayonnaise

Instructions

  1. Sprinkle chicken lightly with salt and pepper, if desired. Cook chicken, in batches, in hot oil a large skillet over medium-high heat 5 to 6 minutes per side or until done.
  2. Meanwhile, grate zest and squeeze juice from lemon. Combine lemon zest, juice, yogurt, cheese, and mayonnaise in a bowl; serve with chicken.

  • 1½ cups orzo
  • 1 (5-oz) pkg baby spinach
  • 2 Tbsp olive oil
  • 1 tsp salt free Greek seasoning

Side Dish Instructions

  1. Cook orzo according to package directions. Drain and return to pot. Add spinach, oil, and seasoning; stir until spinach wilts. Season with salt and pepper, if desired.
