Florentine Pinwheel Steaks

Mashed Potatoes and Garlic Green Beans

Ingredients

  • 1½ lb flank steak
  • 6 slices mozzarella cheese
  • 1 (5-oz) pkg baby spinach
  • ¼ cup chopped fresh basil
  • 2 Tbsp olive oil

Instructions

  1. Preheat grill or grill pan to medium-high heat. Pound steak to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season with salt and pepper, if desired. Layer cheese, spinach, and basil on steak; roll up tightly from one long side.
  2. Secure steak with metal skewers at 1-inch intervals; brush steak with oil, and season lightly with salt and pepper, if desired.
  3. Grill, covered, 12 to 15 minutes or to desired doneness, turning occasionally. Let stand 10 minutes; remove skewers, and slice.

  • 1 (32-oz) pkg refrigerated mashed potatoes
  • 2 (8-oz) pkg thin green beans
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Heat mashed potatoes according to package directions.
  2. Steam beans according to package directions; toss with garlic powder, salt, and pepper.
