Honey Oat Pancakes with Pistachios

Ingredients

  • ¾ cup whole wheat flour
  • ¼ cup old fashioned oats
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1¼ cups low fat buttermilk
  • 1½ Tbsp canola oil
  • 4 Tbsp honey, divided
  • 1 large egg, lightly beaten
  • ¼ tsp vanilla extract
  • ⅓ cup chopped pistachios

Instructions

  1. Whisk together first 6 ingredients in a large bowl. Whisk together buttermilk, oil, 1 Tbsp honey, egg, and vanilla in a medium bowl. Stir in buttermilk mixture to flour mixture until just moistened.
  2. Heat a griddle or large nonstick skillet coated with cooking spray over medium heat. Pour about ¼ cup batter per pancake onto hot griddle or skillet.
  3. Cook 2 to 3 minutes per side or until done. Top with nuts and remaining 3 Tbsp honey.
