Honey Oat Pancakes with Pistachios

Ingredients
- ¾ cup whole wheat flour
- ¼ cup old fashioned oats
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1¼ cups low fat buttermilk
- 1½ Tbsp canola oil
- 4 Tbsp honey, divided
- 1 large egg, lightly beaten
- ¼ tsp vanilla extract
- ⅓ cup chopped pistachios
Instructions
- Whisk together first 6 ingredients in a large bowl. Whisk together buttermilk, oil, 1 Tbsp honey, egg, and vanilla in a medium bowl. Stir in buttermilk mixture to flour mixture until just moistened.
- Heat a griddle or large nonstick skillet coated with cooking spray over medium heat. Pour about ¼ cup batter per pancake onto hot griddle or skillet.
- Cook 2 to 3 minutes per side or until done. Top with nuts and remaining 3 Tbsp honey.
