Ham and Cheese Hash Brown Waffles

Ingredients

  • ½ (30-oz) pkg frozen shredded hash browns, thawed
  • ½ (8-oz) pkg sliced low sodium ham, chopped
  • 1 cup shredded reduced fat sharp Cheddar cheese
  • 2 large eggs, lightly beaten
  • ½ tsp garlic salt

Instructions

  1. Squeeze hash browns dry using paper towels to remove excess moisture.
  2. Place potatoes in a large bowl. Stir in ham, cheese, eggs, and garlic salt.
  3. Preheat waffle iron according to manufacturer's directions. Spray both sides of iron with cooking spray.
  4. Spoon about 1 cup potato mixture onto waffle iron; close and cook 5 minutes or until browned and crisp. Repeat procedure with remaining potato mixture.

  • 1 (4.4-oz) pkg blueberries
  • 4 mandarin oranges, peeled and segmented

  1. Toss together fruit in a bowl.
