Ham and Cheese Hash Brown Waffles
Blueberry-Orange Toss
Ingredients
- ½ (30-oz) pkg frozen shredded hash browns, thawed
- ½ (8-oz) pkg sliced low sodium ham, chopped
- 1 cup shredded reduced fat sharp Cheddar cheese
- 2 large eggs, lightly beaten
- ½ tsp garlic salt
Instructions
- Squeeze hash browns dry using paper towels to remove excess moisture.
- Place potatoes in a large bowl. Stir in ham, cheese, eggs, and garlic salt.
- Preheat waffle iron according to manufacturer's directions. Spray both sides of iron with cooking spray.
- Spoon about 1 cup potato mixture onto waffle iron; close and cook 5 minutes or until browned and crisp. Repeat procedure with remaining potato mixture.

- 1 (4.4-oz) pkg blueberries
- 4 mandarin oranges, peeled and segmented
Side Dish Instructions
- Toss together fruit in a bowl.
