Southwest Shrimp Salad
Ingredients
- 1 lb peeled and deveined, large raw shrimp
- 1 Tbsp low sodium taco seasoning
- 3½ Tbsp olive oil, divided
- 2 Tbsp lime juice
- 1 clove garlic, minced
- ¼ tsp salt
- 1 (5-oz) pkg spring mix
- 1 English cucumber, diced
- ½ red onion, thinly sliced
- 1 avocado, diced
- 2 radishes, sliced
- ½ cup crumbled queso fresco
- 12 tortilla chips, lightly crushed
Instructions
- Sprinkle shrimp with taco seasoning. Cook shrimp in ½ Tbsp hot oil in a large skillet over medium-high heat 2 to 3 minutes or until done.
- Whisk together 3 Tbsp oil, lime juice, garlic, and salt in a large bowl. Add greens, sautéed shrimp, cucumber, onion, avocado, radishes, cheese, and crushed tortilla chips; toss.
