Southwest Shrimp Salad

Ingredients

  • 1 lb peeled and deveined, large raw shrimp 
  • 1 Tbsp low sodium taco seasoning
  • 3½ Tbsp olive oil, divided
  • 2 Tbsp lime juice
  • 1 clove garlic, minced
  • ¼ tsp salt 
  • 1 (5-oz) pkg spring mix
  • 1 English cucumber, diced
  • ½ red onion, thinly sliced
  • 1 avocado, diced
  • 2 radishes, sliced
  • ½ cup crumbled queso fresco
  • 12 tortilla chips, lightly crushed

Instructions

  1. Sprinkle shrimp with taco seasoning. Cook shrimp in ½ Tbsp hot oil in a large skillet over medium-high heat 2 to 3 minutes or until done.
  2. Whisk together 3 Tbsp oil, lime juice, garlic, and salt in a large bowl. Add greens, sautéed shrimp, cucumber, onion, avocado, radishes, cheese, and crushed tortilla chips; toss.
