Caprese Panini

Ingredients

  • 8 (1-oz) slices whole grain bread
  • 1 (8-oz) ball fresh mozzarella cheese, sliced
  • 2 Roma tomatoes, sliced
  • 1 cup fresh basil leaves
  • 2 Tbsp balsamic glaze
  • ½ tsp pepper

Instructions

  1. Top 4 bread slices with cheese, tomatoes, and basil; drizzle with glaze, and sprinkle with salt and pepper. Cover with remaining 4 bread slices. Lightly coat outsides sandwiches with cooking spray.
  2. Cook sandwiches, in batches if necessary, in a large skillet (or panini press) over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted.

  • 2⅔ cups seedless red grapes

Side Dish Instructions

  1. Serve grapes alongside sandwiches.
