Ingredients

  • ½ cup butter, softened
  • 1 tsp garlic powder
  • 2 tsp lemon zest
  • 2 lb boneless, skinless chicken breasts, halved crosswise
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F. Stir together butter, garlic powder, and lemon zest in a small bowl.
  2. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season with salt and pepper, if desired.
  3. Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes or until browned on both sides; transfer chicken to a lightly greased rimmed baking sheet. Spread butter mixture over chicken.
  4. Bake 10 minutes or until chicken is done.

  • 2 (8-oz) pkg thin green beans
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

  2. Steam beans according to package directions; toss with garlic powder, salt, and pepper.
