Ingredients
- ½ cup butter, softened
- 1 tsp garlic powder
- 2 tsp lemon zest
- 2 lb boneless, skinless chicken breasts, halved crosswise
- 2 Tbsp olive oil
Instructions
- Preheat oven to 400°F. Stir together butter, garlic powder, and lemon zest in a small bowl.
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season with salt and pepper, if desired.
- Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes or until browned on both sides; transfer chicken to a lightly greased rimmed baking sheet. Spread butter mixture over chicken.
- Bake 10 minutes or until chicken is done.
