Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ cup panko breadcrumbs
  • 2½ Tbsp grated Parmesan cheese
  • 2 tsp olive oil
  • 1 tsp dried parsley flakes
  • 1 small clove garlic, minced
  • 4 tsp Dijon mustard
  • 1 cup grape tomatoes

Instructions

  1. Preheat oven to 425°F. Halve chicken breasts crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with salt and pepper.
  2. Stir together breadcrumbs, cheese, oil, parsley, and garlic in a shallow dish.
  3. Brush chicken with mustard, and dredge in panko mixture to coat. Place on a greased rimmed baking sheet. Arrange tomatoes around chicken.
  4. Bake 20 to 25 minutes or until chicken is done.

Side Dish Ingredients

  • 1 (5-oz) pkg spring mix
  • ½ cucumber, sliced 
  • 1 Roma tomato, chopped
  • ¼ cup Italian dressing

Side Dish Instructions

  1. Toss together all ingredients in a bowl just before serving.
