Ingredients
- ¾ lb boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ cup panko breadcrumbs
- 2½ Tbsp grated Parmesan cheese
- 2 tsp olive oil
- 1 tsp dried parsley flakes
- 1 small clove garlic, minced
- 4 tsp Dijon mustard
- 1 cup grape tomatoes
Instructions
- Preheat oven to 425°F. Halve chicken breasts crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with salt and pepper.
- Stir together breadcrumbs, cheese, oil, parsley, and garlic in a shallow dish.
- Brush chicken with mustard, and dredge in panko mixture to coat. Place on a greased rimmed baking sheet. Arrange tomatoes around chicken.
- Bake 20 to 25 minutes or until chicken is done.

- 1 (5-oz) pkg spring mix
- ½ cucumber, sliced
- 1 Roma tomato, chopped
- ¼ cup Italian dressing
Side Dish Instructions
- Toss together all ingredients in a bowl just before serving.
