Sheet Pan Chicken Thighs and Asparagus

Ingredients

  • ¼ cup butter, softened and divided
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 2½ lb bone in, skin on chicken thighs
  • 2 lb asparagus, trimmed
  • 1 lemon, halved

Instructions

  1. Preheat oven to 425°F. Combine 2 Tbsp butter, paprika, cumin, salt, pepper, garlic powder, and onion powder in a small bowl. Brush mixture all over chicken.
  2. Arrange chicken on one side of a large rimmed baking sheet. Bake 35 minutes.
  3. Meanwhile, melt 2 Tbsp butter.Add asparagus to other half of baking sheet, and drizzle with melted butter.
  4. Bake 10 minutes longer or until chicken is done; squeeze juice from lemon over chicken and asparagus.

  • 2 (20-oz) pkg frozen mashed cauliflower with olive oil and sea salt

  1. Cook cauliflower according to package directions.
