Ingredients

  • 2 (6-oz) cans wild caught tuna in water, drained and flaked
  • 1 large egg, lightly beaten
  • ½ Tbsp fresh lemon juice
  • ⅓ cup Italian breadcrumbs
  • ½ Tbsp olive oil mayonnaise
  • 1 tsp dried dill
  • 1 Tbsp olive oil
  • Lemon wedges

Instructions

  1. Gently combine tuna and next 5 ingredients; shape into 4 (1-inch-thick) patties.
  2. Cook patties in hot oil in a nonstick skillet over medium heat 3 to 4 minutes per side or until done. Serve with lemon wedges, if desired.

Side Dish Ingredients

  • 1 clove garlic, minced
  • 1 cup organic grape tomatoes, halved
  • 1 Tbsp olive oil
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 2 Tbsp water
  • 1 (5-oz) pkg organic baby spinach
  • 2 Tbsp chopped fresh basil
  • ¼ tsp pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook garlic and tomatoes in hot oil in a saucepan over medium heat 3 minutes or until tomatoes begin to soften; add beans and water.
  2. Bring to a boil; add spinach. Cook 3 minutes or until spinach is wilted; stir in basil, pepper, and salt.
