Tuna Cakes
Warm White Beans, Spinach, and Tomatoes

Ingredients
- 2 (6-oz) cans wild caught tuna in water, drained and flaked
- 1 large egg, lightly beaten
- ½ Tbsp fresh lemon juice
- ⅓ cup Italian breadcrumbs
- ½ Tbsp olive oil mayonnaise
- 1 tsp dried dill
- 1 Tbsp olive oil
- Lemon wedges
Instructions
- Gently combine tuna and next 5 ingredients; shape into 4 (1-inch-thick) patties.
- Cook patties in hot oil in a nonstick skillet over medium heat 3 to 4 minutes per side or until done. Serve with lemon wedges, if desired.
Side Dish Ingredients
- 1 clove garlic, minced
- 1 cup organic grape tomatoes, halved
- 1 Tbsp olive oil
- 1 (15-oz) can cannellini beans, drained and rinsed
- 2 Tbsp water
- 1 (5-oz) pkg organic baby spinach
- 2 Tbsp chopped fresh basil
- ¼ tsp pepper
- ⅛ tsp salt
Side Dish Instructions
- Cook garlic and tomatoes in hot oil in a saucepan over medium heat 3 minutes or until tomatoes begin to soften; add beans and water.
- Bring to a boil; add spinach. Cook 3 minutes or until spinach is wilted; stir in basil, pepper, and salt.
