Sweet and Spicy Pork Medallions

Ingredients

  • 3 Tbsp honey
  • 3 Tbsp lime juice
  • 2 Tbsp rice vinegar
  • 2 Tbsp dark sesame oil
  • 2 Tbsp fish sauce
  • 2 tsp Sriracha
  • 2 (1-lb) pork tenderloins, trimmed and cut into ½ inch thick medallions
  • ½ tsp pepper

Instructions

  1. Whisk together honey, lime juice, vinegar, oil, fish sauce, and Sriracha.
  2. Sprinkle pork with pepper. Brush half of honey mixture over pork. Reserve remaining honey mixture.
  3. Sear pork, in batches, in a large nonstick skillet coated with cooking spray over medium-high heat 3 minutes per side or until done. Drizzle pork with reserved sauce.

Side Dish Ingredients

  • 2 large carrots
  • 1 small head napa cabbage, shredded
  • ½ cup chopped green onions
  • 1 clove garlic, minced
  • 2 Tbsp dark sesame oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Peel carrots into long thin ribbons using a vegetable peeler.
  2. Cook carrots, cabbage, onions, and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until just tender. Sprinkle with salt and pepper.
