Sweet and Spicy Pork Medallions
Quick Napa Cabbage and Carrot Sauté
Ingredients
- 3 Tbsp honey
- 3 Tbsp lime juice
- 2 Tbsp rice vinegar
- 2 Tbsp dark sesame oil
- 2 Tbsp fish sauce
- 2 tsp Sriracha
- 2 (1-lb) pork tenderloins, trimmed and cut into ½ inch thick medallions
- ½ tsp pepper
Instructions
- Whisk together honey, lime juice, vinegar, oil, fish sauce, and Sriracha.
- Sprinkle pork with pepper. Brush half of honey mixture over pork. Reserve remaining honey mixture.
- Sear pork, in batches, in a large nonstick skillet coated with cooking spray over medium-high heat 3 minutes per side or until done. Drizzle pork with reserved sauce.

- 2 large carrots
- 1 small head napa cabbage, shredded
- ½ cup chopped green onions
- 1 clove garlic, minced
- 2 Tbsp dark sesame oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Peel carrots into long thin ribbons using a vegetable peeler.
- Cook carrots, cabbage, onions, and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until just tender. Sprinkle with salt and pepper.
