Cheeseburger Empanadas

Ingredients

  • 1 lb ground beef
  • 1 cup Thousand Island dressing, divided
  • 1 tsp garlic salt
  • ½ tsp onion powder
  • ½ tsp pepper
  • 1 (14.1-oz) pkg refrigerated pie crusts
  • ½ cup shredded sharp Cheddar cheese 
  • 1 large egg, lightly beaten

Instructions

  1. Preheat oven to 350°F. Cook beef in a large nonstick skillet over medium heat until browned and crumbly. Drain and return to skillet. Stir in ½ cup dressing, garlic salt, onion powder, and pepper.
  2. Meanwhile, unroll pie crusts on a lightly floured surface; roll each into a 14-inch circle. Cut 18 rounds from crust using a 4-inch round cutter.
  3. Spoon beef mixture over one side of each dough round; top with cheese. Fold dough over filling, and crimp edges with a fork to seal.
  4. Place empanadas on 2 lightly greased baking sheets. Brush beaten egg over dough; bake 12 to 15 minutes or until browned. Serve with ½ cup dressing for dipping.

  • 2 (12-oz) pkg green beans
  • 6 slices bacon, cut in half
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp butter
  • 1 (12-oz) pkg frozen corn kernels

Side Dish Instructions

  1. Preheat oven to 400°F. Divide green beans into 12 bundles. Wrap each bundle in 1 slice bacon and place on a foil-lined rimmed baking sheet. Season lightly with salt and pepper, if desired.
  2. Bake 20 to 25 minutes or until beans are tender and bacon is browned. Drizzle with vinegar.
  3. Meanwhile, melt butter in a large skillet over medium heat. Add corn, and cook 8 to 10 minutes or until corn begins to brown, stirring occasionally. Season with salt and pepper, if desired.
