Ingredients

  • 4 low carb whole wheat tortillas
  • 1 Tbsp olive oil
  • ½ cup plain hummus
  • ½ (3-oz) pkg thinly sliced sun dried tomatoes
  • ¾ cup crumbled reduced fat feta cheese
  • ¼ cup sliced pitted kalamata olives
  • ½ cup thinly sliced red onion

Instructions

  1. Preheat oven to 450°F. Place tortillas on a baking sheet. Brush with oil; bake 5 minutes.
  2. Top each tortilla with hummus, tomatoes, and cheese; bake 5 minutes or until tortillas are crisp. Sprinkle with olives and onion before serving.
