Italian Chicken Bowls

Ingredients
- 1½ cups orzo
- ½ cup olive oil vinaigrette
- 1½ lb boneless, skinless chicken thighs, cubed
- 1½ tsp Italian seasoning
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- 1 pint grape tomatoes
- 3 Tbsp olive oil
- 1 red onion, chopped
- ½ (8-oz) pkg fresh mozzarella cheese pearls
Instructions
- Cook pasta according to package directions. Drain, and toss with vinaigrette.
- Sprinkle chicken with Italian seasoning, garlic powder, salt, and pepper. Cook chicken, tomatoes, and onion in 2 Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes or until chicken is done and vegetables are tender.
- Stir in cheese. Serve chicken mixture over orzo.
