Ingredients

  • 3 heads romaine lettuce, halved lengthwise
  • 3 peaches, peeled and cut into wedges
  • 1 onion, cut into ½-thick-rings
  • ¼ cup olive oil
  • 1 pint multicolor grape tomatoes
  • 1 cup crumbled feta cheese
  • ¼ cup fresh basil leaves
  • 6 Tbsp balsamic glaze

Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush cut sides of lettuce, peach slices, and onion rings with oil.
  2. Grill lettuce and peaches, covered, 2 minutes per side or until charred. Grill onion rings 3 to 4 minutes per side or until browned and tender.
  3. Arrange lettuce on plates; top with grilled peaches, onions, tomatoes, feta, and basil; drizzle with glaze.
  4. Serve with a glass of Sutter Home Pinot Grigio.
