Spring Minestrone
Multigrain Rolls
Ingredients
- 2 cloves garlic, minced
- 1 lb Yukon Gold potatoes, cut into 1 inch pieces
- 2 Tbsp olive oil
- 2 (32-oz) cartons less sodium chicken broth
- 1 (14.5-oz) can petite diced tomatoes
- 1 (15-oz) can chickpeas, rinsed and drained
- 1 (12-oz) pkg frozen green peas
- ½ lb asparagus, trimmed and cut into 1 inch pieces
- 1 (10-oz) pkg frozen chopped spinach, thawed and drained
- ¾ cup pesto
Instructions
- Cook garlic and potatoes in hot oil in a large Dutch oven over medium heat 2 minutes. Add broth and tomatoes; bring to a boil, reduce heat, and simmer 10 minutes.
- Stir in chickpeas, peas, asparagus, and spinach; simmer 5 minutes. Stir in pesto; cook 1 minute.
