Potato and Ham Patties

Ingredients

  • 1 (32-oz) pkg refrigerated mashed potatoes
  • 1 (6-oz) pkg Canadian bacon
  • ½ (8-oz) pkg Monterey Jack cheese, cubed
  • 1 cup panko breadcrumbs 
  • 2 large eggs, separated
  • ¼ cup olive oil
  • ½ (16-oz) pkg refrigerated salsa

Instructions

  1. Heat mashed potatoes according to package directions.
  2. Stir together potatoes, bacon, cheese, breadcrumbs, and egg yolks in a bowl.
  3. Beat egg whites in a separate bowl with a mixer on high speed until stiff peaks form.
  4. Shape potato mixture into 12 patties. Dip each patty in beaten egg white to coat.  Cook patties, in batches, in hot oil in a large nonstick skillet over medium heat 3 to 4 minutes per side or until golden brown.
  5. Drain patties on a paper towel-lined plate. Serve patties with salsa.

  •  2 (10.3-oz) Southwest salad kits 
  • 1 (15-oz) can no salt added black beans 

Side Dish Instructions

  1. Prepare salad kits according to package directions in a large bowl. Add beans and toss.
