Taco Stuffed Sweet Potatoes

Ingredients

  • 6 large sweet potatoes
  • 1½ lb ground beef
  • 1 (1-oz) envelope less sodium taco seasoning mix
  • ⅓ cup water
  • 1 (8-oz) pkg shredded Monterey Jack cheese
  • 2 (10.3-oz) Southwest chopped salad kits

Instructions

  1. Prick each potato several times with a fork. Microwave at HIGH 5 minutes, and turn potatoes. Microwave 5 to 7 minutes longer or until potatoes are tender.
  2. Meanwhile, cook beef in a large skillet over medium-high heat until browned and crumbly; drain, and return to skillet. Add seasoning mix and water; cook until mixture is thickened.
  3. Divide potatoes among 6 plates. Split potatoes and fluff with a fork. Spoon beef mixture over potatoes; sprinkle with cheese.
  4. Prepare salad kits according to package directions in a large bowl; serve with potatoes.
