Steak and Vegetable Couscous

Ingredients

  • ½ lb skirt steak, trimmed
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper
  • ½ cup Israeli couscous
  • ¼ cup pitted kalamata olives
  • ¼ cup roasted red peppers, drained and sliced
  • ¼ cup crumbled feta cheese
  • 3 Tbsp olive oil vinaigrette
  • 3 Tbsp chopped fresh flat leaf parsley

Instructions

  1. Preheat broiler. Place steak on a rimmed baking sheet; sprinkle with salt and pepper. Broil 5 minutes per side or until desired doneness. Let stand 5 minutes before thinly slicing across the grain.
  2. Meanwhile, cook couscous according to package directions. Stir in olives, peppers, cheese, vinaigrette, and parsley. Serve steak with couscous.
