Steak and Vegetable Couscous

Ingredients
- ½ lb skirt steak, trimmed
- ⅛ tsp kosher salt
- ⅛ tsp pepper
- ½ cup Israeli couscous
- ¼ cup pitted kalamata olives
- ¼ cup roasted red peppers, drained and sliced
- ¼ cup crumbled feta cheese
- 3 Tbsp olive oil vinaigrette
- 3 Tbsp chopped fresh flat leaf parsley
Instructions
- Preheat broiler. Place steak on a rimmed baking sheet; sprinkle with salt and pepper. Broil 5 minutes per side or until desired doneness. Let stand 5 minutes before thinly slicing across the grain.
- Meanwhile, cook couscous according to package directions. Stir in olives, peppers, cheese, vinaigrette, and parsley. Serve steak with couscous.
