Pork Chops with Gravy

Ingredients
- 1½ lb boneless pork chops
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 2 Tbsp olive oil
- 1½ cups less sodium beef broth
- ½ cup sour cream
- 1 Tbsp Worcestershire sauce
- 1 Tbsp cornstarch
- 1 Tbsp minced garlic
- 1½ tsp Italian seasoning
Instructions
- Sprinkle pork with ¼ tsp each salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
- Meanwhile, combine broth, sour cream, Worcestershire, cornstarch, garlic, Italian seasoning, and ¼ tsp each salt and pepper in a saucepan over medium heat. Cook, stirring often, 8 to 10 minutes or until thickened. Spoon sauce over pork.

- 1 (24-oz) pkg refrigerated mashed potatoes
- 2 Tbsp butter
- 1 (10-oz) pkg baby spinach
- 1 Tbsp minced garlic
Side Dish Instructions
- Cook potatoes according to package directions.
- Melt butter in a large skillet over medium heat. Add spinach and garlic; cook until spinach wilts and garlic is fragrant.
