Pork Chops with Gravy

Wilted Spinach and Garlic Mashed Potatoes

Ingredients

  • 1½ lb boneless pork chops
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 2 Tbsp olive oil
  • 1½ cups less sodium beef broth
  • ½ cup sour cream
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp cornstarch
  • 1 Tbsp minced garlic
  • 1½ tsp Italian seasoning

Instructions

  1. Sprinkle pork with ¼ tsp each salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
  2. Meanwhile, combine broth, sour cream, Worcestershire, cornstarch, garlic, Italian seasoning, and ¼ tsp each salt and pepper in a saucepan over medium heat. Cook, stirring often, 8 to 10 minutes or until thickened. Spoon sauce over pork.

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 2 Tbsp butter
  • 1 (10-oz) pkg baby spinach
  • 1 Tbsp minced garlic

Side Dish Instructions

  1. Cook potatoes according to package directions.
  2. Melt butter in a large skillet over medium heat. Add spinach and garlic; cook until spinach wilts and garlic is fragrant.
