Spanakopita Pasta Bake

Barilla Red Lentil Rotini Pasta
Ingredients
- 1 (16-oz) pkg whole grain rotini
- 2 (5-oz) pkg baby spinach
- 1 cup part skim ricotta cheese
- ¾ cup crumbled feta cheese
- 1 (0.5-oz) pkg fresh dill, chopped
- 4 cloves garlic, minced
- ½ tsp kosher salt
- ½ tsp pepper
- 6 oz fresh mozzarella cheese, sliced
Instructions
- Preheat oven to 375°F. Cook pasta according to package directions in a large pot; drain and return pasta to pot, reserving ½ cup pasta water. Gradually stir in spinach until wilted.
- Toss ricotta, reserved pasta water, feta, chopped dill, garlic, salt, and pepper with pasta mixture until combined, spoon into a lightly greased 13- x 9-inch baking dish, and top with mozzarella.
- Bake 30 to 40 minutes or until cheese melts and is lightly browned (see Note). sprinkle with more dill, if desired.
