Bacon-Avocado Pasta Salad
Ingredients
- 6 oz whole grain rotini pasta
- 8 slices center cut bacon
- 1 avocado
- ¼ cup reduced fat mayonnaise
- ¼ cup 1% low fat milk
- 2 Tbsp chopped fresh flat leaf parsley
- 2 tsp white vinegar
- ¼ tsp garlic salt
- ½ tsp pepper
- 1 pint grape tomatoes, halved
- ½ cup chopped red onion
Instructions
- Cook pasta according to package directions; drain, and rinse under cold water to cool.
- Cook bacon in a large nonstick skillet over medium heat 6 minutes or until crisp; drain, and crumble.
- Mash avocado in a bowl. Stir in mayonnaise, milk, parsley, vinegar, garlic salt, and pepper. Add pasta, bacon, tomatoes, and onion; toss.
