Bacon-Avocado Pasta Salad

Ingredients

  • 6 oz whole grain rotini pasta
  • 8 slices center cut bacon
  • 1 avocado
  • ¼ cup reduced fat mayonnaise
  • ¼ cup 1% low fat milk
  • 2 Tbsp chopped fresh flat leaf parsley
  • 2 tsp white vinegar
  • ¼ tsp garlic salt
  • ½ tsp pepper
  • 1 pint grape tomatoes, halved
  • ½ cup chopped red onion

Instructions

  1. Cook pasta according to package directions; drain, and rinse under cold water to cool.
  2. Cook bacon in a large nonstick skillet over medium heat 6 minutes or until crisp; drain, and crumble.
  3. Mash avocado in a bowl. Stir in mayonnaise, milk, parsley, vinegar, garlic salt, and pepper. Add pasta, bacon, tomatoes, and onion; toss.
