Sloppy Joe Wraps
Celery, Walnut, and Pear Toss
Ingredients
- 1½ lb grass fed ground beef
- 1 onion, chopped
- 1 sweet potato, peeled and shredded
- 2 cloves garlic, minced
- 1 Tbsp avocado oil
- 1 (6-oz) can tomato paste
- ½ cup organic chicken broth
- 2 tsp balsamic vinegar
- 1 Tbsp Italian seasoning
- ¼ tsp pepper
- 2 heads Bibb lettuce, leaves separated
Instructions
- Cook beef in a large nonstick skillet over medium heat 8 minutes or until browned; drain and set aside.
- Cook onion, potato, and garlic in hot oil in skillet 5 minutes or until vegetables are tender. Stir in tomato paste, broth, vinegar, Italian seasoning, and pepper.
- Return beef to skillet, and cook 10 minutes or until sauce thickens. Season with salt, if desired.
- Spoon beef mixture onto lettuce leaves; roll up.
Side Dish Ingredients
- ⅔ cup chopped raw walnuts
- 4 stalks celery, thinly sliced
- 2 Tbsp extra virgin olive oil
- 2 Tbsp fresh lemon juice
- 2 pears, finely chopped
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat 3 to 4 minutes or until fragrant, stirring often.
- Combine all ingredients in a bowl; toss well. Season with salt and pepper, if desired.
