Celery, Walnut, and Pear Toss

Ingredients

  • 1½ lb grass fed ground beef
  • 1 onion, chopped
  • 1 sweet potato, peeled and shredded
  • 2 cloves garlic, minced
  • 1 Tbsp avocado oil
  • 1 (6-oz) can tomato paste
  • ½ cup organic chicken broth
  • 2 tsp balsamic vinegar
  • 1 Tbsp Italian seasoning
  • ¼ tsp pepper
  • 2 heads Bibb lettuce, leaves separated

Instructions

  1. Cook beef in a large nonstick skillet over medium heat 8 minutes or until browned; drain and set aside.
  2. Cook onion, potato, and garlic in hot oil in skillet 5 minutes or until vegetables are tender. Stir in tomato paste, broth, vinegar, Italian seasoning, and pepper.
  3. Return beef to skillet, and cook 10 minutes or until sauce thickens. Season with salt, if desired.
  4. Spoon beef mixture onto lettuce leaves; roll up.

Side Dish Ingredients

  • ⅔ cup chopped raw walnuts
  • 4 stalks celery, thinly sliced
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 2 pears, finely chopped

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium heat 3 to 4 minutes or until fragrant, stirring often.
  2. Combine all ingredients in a bowl; toss well. Season with salt and pepper, if desired.
