Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 cup panko breadcrumbs
  • 1 (1-oz) envelope Ranch dressing mix, divided
  • 6 oz ⅓ less fat cream cheese, softened
  • 3 Tbsp milk or buttermilk
  • 3 green onions, sliced and divided

Instructions

  1. Preheat broiler. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side. Transfer chicken to a greased 13- x 9-inch baking dish.
  2. Meanwhile, toss together breadcrumbs and 1 Tbsp Ranch mix. Stir together cream cheese, milk, remaining Ranch mix, and 2 sliced green onions.
  3. Spread cream cheese mixture over chicken; sprinkle with breadcrumb mixture. Broil 3 minutes or until breadcrumbs are toasted. Sprinkle with 1 sliced green onion.

Side Dish Ingredients

  • 1 (16-oz) pkg tricolor coleslaw
  • ½ cup dill pickle relish
  • ¼ cup mayonnaise
  • 3 Tbsp natural rice vinegar
  • 2 Tbsp chopped fresh dill
  • 1 tsp granulated sugar

Side Dish Instructions

  1. Toss together all ingredients in a large bowl. Cover and refrigerate up to 1 hour before serving .
