Crispy-Creamy Ranch Chicken

Ingredients
- 2 lb boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 cup panko breadcrumbs
- 1 (1-oz) envelope Ranch dressing mix, divided
- 6 oz ⅓ less fat cream cheese, softened
- 3 Tbsp milk or buttermilk
- 3 green onions, sliced and divided
Instructions
- Preheat broiler. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side. Transfer chicken to a greased 13- x 9-inch baking dish.
- Meanwhile, toss together breadcrumbs and 1 Tbsp Ranch mix. Stir together cream cheese, milk, remaining Ranch mix, and 2 sliced green onions.
- Spread cream cheese mixture over chicken; sprinkle with breadcrumb mixture. Broil 3 minutes or until breadcrumbs are toasted. Sprinkle with 1 sliced green onion.
Side Dish Ingredients
- 1 (16-oz) pkg tricolor coleslaw
- ½ cup dill pickle relish
- ¼ cup mayonnaise
- 3 Tbsp natural rice vinegar
- 2 Tbsp chopped fresh dill
- 1 tsp granulated sugar
Side Dish Instructions
- Toss together all ingredients in a large bowl. Cover and refrigerate up to 1 hour before serving .
