Pork Lettuce Wraps with Peanut Sauce

Ingredients

  • 1½ lb ground pork
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp minced garlic
  • 2 Tbsp olive oil
  • ½ cup creamy peanut butter
  • ¼ cup sesame ginger dressing
  • 1 head green leaf lettuce, leaves separated
  • ½ cup shredded carrots
  • ⅓ cup chopped fresh cilantro

Instructions

  1. Sprinkle pork with salt and pepper. Cook pork and garlic in hot oil in a large skillet over medium-high heat 8 minutes or until pork is crumbled and no longer pink.
  2. Meanwhile, whisk together peanut butter and dressing.
  3. Divide pork among lettuce leaves; top with carrots, cilantro, and peanut sauce.

  • 1 (8-oz) pkg rice noodles
  • 1 Tbsp sesame oil
  • 1 Tbsp natural rice vinegar
  • 1 Tbsp less sodium soy sauce
  • 3 green onions, thinly sliced

Side Dish Instructions

  1. Cook noodles according to package directions.
  2. Toss noodles with oil, vinegar, soy sauce, and onions.
