Pork Lettuce Wraps with Peanut Sauce
Sesame Rice Noodles
Ingredients
- 1½ lb ground pork
- ½ tsp salt
- ½ tsp pepper
- 1 Tbsp minced garlic
- 2 Tbsp olive oil
- ½ cup creamy peanut butter
- ¼ cup sesame ginger dressing
- 1 head green leaf lettuce, leaves separated
- ½ cup shredded carrots
- ⅓ cup chopped fresh cilantro
Instructions
- Sprinkle pork with salt and pepper. Cook pork and garlic in hot oil in a large skillet over medium-high heat 8 minutes or until pork is crumbled and no longer pink.
- Meanwhile, whisk together peanut butter and dressing.
- Divide pork among lettuce leaves; top with carrots, cilantro, and peanut sauce.

- 1 (8-oz) pkg rice noodles
- 1 Tbsp sesame oil
- 1 Tbsp natural rice vinegar
- 1 Tbsp less sodium soy sauce
- 3 green onions, thinly sliced
Side Dish Instructions
- Cook noodles according to package directions.
- Toss noodles with oil, vinegar, soy sauce, and onions.
