Tuscan Pork Tenderloin
Italian Mashed Potatoes and Roasted Green BeansIngredients
- 1 Tbsp Italian seasoning
- 1 tsp garlic powder
- 2 (1-lb) pork tenderloins, trimmed
- 2 Tbsp olive oil
Instructions
- Preheat oven to 425°F. Rub Italian seasoning and garlic powder all over pork. Season with salt and pepper, if desired.
- Cook pork in hot oil in a large ovenproof skillet over medium-high heat 5 minutes per side.
- Transfer skillet to oven. Bake 10 minutes or until a meat thermometer reads 145°F. Let stand 5 minutes before slicing.
Side Dish Ingredients
- 2 (8-oz) pkg thin green beans
- 1 Tbsp olive oil
- 2 lb red potatoes, cubed
- ¾ cup shredded Parmesan cheese
- 3 Tbsp butter
- ¾ tsp Italian seasoning
Side Dish Instructions
- Preheat oven to 425°F. Toss together green beans and oil on a large rimmed baking sheet; spread in a single layer. Season with salt and pepper, if desired.
- Bake 15 to 20 minutes or until browned and tender.
- Meanwhile, bring potatoes and water to cover to a boil in a Dutch oven. Cook 8 to 10 minutes or until tender; drain.
- Return potatoes to pot; add cheese, butter, and seasoning; mash potatoes with a potato masher to desired consistency. Season with salt and pepper, if desired.
