Ingredients

  • 1½ lb ground beef
  • 1 (24-oz) jar arrabbiata sauce
  • 6 slices Italian bread
  • 1½ cups ricotta cheese
  • 1 Tbsp Italian seasoning
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Cook beef in a large skillet over medium-high heat until browned and crumbly; drain, and return to skillet. Add arrabbiata sauce, and cook until thoroughly heated.
  2. Meanwhile, preheat broiler. Arrange bread slices on a large baking sheet; coat generously with cooking spray. Broil until toasted.
  3. Stir together ricotta and seasoning in a bowl. Spread over toasted bread. Top with meat sauce and mozzarella. Broil 3 to 4 minutes or until cheese is melted.

Side Dish Ingredients

  • 1 (10-oz) pkg baby kale
  • 1 fennel bulb, halved and thinly sliced
  • ½ cup dried cherries
  • ¼ cup shredded Parmesan cheese
  • ½ cup lemon vinaigrette

Side Dish Instructions

  1. Combine kale, fennel, cherries, and cheese in a bowl; add vinaigrette. Toss.
